What do you do when you have a case of fresh, ripen mangos at home? Make chia pudding! Mango-Coconut Chia Pudding is my absolute favorite and I NEVER seem to get sick of it. Mangoes are one of those fruits I can’t bear to throw in a blender with other fruits because then you lose it’s distinct sweetness that I prefer to enjoy on it’s own.
- 1 cup almond milk
- 1/2 cup coconut milk
- 2tbsp chia seeds
- 1 fresh mango (chopped in chunks)
- 1tbsp honey (or sweetener of your choice) & shredded coconut
Mix all of the following ingredients together, refrigerate overnight and indulge!
Of course, you can omit the coconut milk to eliminate some of the fat and only use almond milk. You can also get creative and add ingredients such as shredded coconut to make it extra delicious!
