Girls’ Night

A simple, little black dress with some accessories is my favorite outfit.

I wanted to wear nude pumps but I had to keep in mind that I was spending a fun and food-filled night at Section 3 with my short little Asian girlfriends who I had no intention on towering over, especially with the fact that there would be cocktails involved. It’s alright though because I got to wear boots, which means fall is “officially” here (to me anyway)!

Healthy Pancakes

Today, I made pancakes for dinner. I actually planned to make blueberry banana pancakes but I came home and all the blueberries were gone! It was all good though because I just heated some strawberries on the stove with lemon juice and Splenda to make a quick and yummy syrup.

Health Pancake

Ingredients:

  • 1/2 Banana
  • 1/2 cup Quaker oats
  • 2 egg whites
  • 1/4 cup Fat-Free Cottage Cheese
  • 1/8 teaspoon Baking Powder
  • Drizzle of Splenda
  • Dash of Cinnamon
  • Dash of Vanilla Extract
  • Dash of Salt
Directions:
  1. Blend it all together in your blender until smooth.
  2. Spray a pan with non-stick spray & cook.
Top with anything! Organic maple syrup or homemade strawberry syrup, bananas and whipped cream like I did! These were so easy to make and so good.

Apple-Chicken Sausage

  • 1 large tart apple, peeled and diced
  • 2 teaspoons poultry seasoning or Mrs. Dash’s
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1 pound lean ground turkey or chicken

Ingredients

  1. In a large bowl, combine the apple, poultry seasoning, salt and pepper.
  2. Crumble chicken/turkey over mixture and mix well.
  3. Shape into 8 3-inch patties.
  4. In a large skillet coated with cooking spray, cook patties over medium heat for 5-6 minutes on each side or until no longer pink.
  5. Drain if necessary.

Food
I used extra lean ground turkey and served it with scrambled eggs + egg whites on the side.

Good Eats

We went to try a trendy restaurant/lounge that served Thai food, tapas and delicious drinks— Pink Elephant Thai. We had some very interesting conversations, including anorexic people, people suddenly ballooning and lazy people who complain about being fat but do nothing about it. I love random girls’ nights.

Assorted Thai dishes and cupcakes we bought in from another place. There were 4 of us and we cut them in quarters so we could try each. Nom.

California Roll in a Bowl

Salad:

  • 1 cup brown rice, cooked (1/2 c dry)
  • 1 head butter or romaine lettuce, chopped
  • 8 oz. imitation crab meat or cooked shrimp, chopped
  • 1 English (seedless) cucumber, thinly sliced (and peeled if not organic)
  • 1 ripe avocado, diced
  • 1 carrot, grated
  • 3 T pickled ginger, chopped (available in the Asian section of most supermarkets)

Dressing:

  • 3 T rice wine vinegar
  • 1 T light soy sauce
  • Wasabi powder to taste (start with 1/2 t)

Garnishes:

  • 1 T sesame seeds
  • 1 large sheet nori (seaweed), toasted and broken into small pieces

 

  1. Combine all ingredients for dressing in a small bowl and whisk ingredients together.
  2. Divide clean, dry and chopped lettuce among four large bowls. Top with crab meat, avocado, cucumber, carrot and ginger. Drizzle dressing over salads, then top with sesame seeds and nori.
  3. Makes 4 servings at about 200 Calories each
